Why is white bleached flour ubiquitously in breads and other baked goods in the US?

White bleached flour has virtually no nutrients, but is used as the main ingredient in most baked products. Why do we have to bleach flour when the bleaching process depletes flour of most of its nutrients? Why don't we use whole wheat flour in all of our breads, cookies and baked goods? I find that even in fancy, expensive restaurants, white bleached flour is commonly used instead of the much healthier organic, whole wheat flour. Is there something political about eating white flour? White flour has little fiber and vitamins and surely contributes to 2 of the biggest killers, cancer and heart disease, in this country. I also noticed that medical doctors, including my own, don't tell their patients to avoid white bleached flour. I know someone with a colon condition which was in part due to the lack of fiber in his diet whose doctor didn't tell him to avoid white flour baked goods. I find this strange because this caveat is well known among nutritionists and Eastern medicine doctors.

Finally a good question! The answer: It is more expensive to make whole wheat, same reason why they use high-fructose corn syrup and partially hydrogenated oils they are cheaper to make. It's all about the money so companies and doctors will make the cash, and they don't care how sick we get. The whole wheat products with fiber and B vitamins, among others (because they dont remove the germ and bran) are more expensive, but you can't put a price on good health. They put in manufactured vitamins in bleached flour (the bleaching doesn't remove the vitamins and fiber, it's the refining or removing of bran and germ that does that) to make up for it but they mess it up. Big companies are evil.

Reply:Its absolutely pathetic! Its bleached with chlorine, through animal bones, then synthetic animal derived vitamins are add it to it, calling it "enriched" Sounds like a load of silly, useless gargage to me-why not just thresh the wheat and serve it up in its whole grain form? And what about white sugar? Table salt? They go through the same process. Its crazy and makes no sense. I developed an allergy to wheat, most likely because of all the crap in it, as opposed to the wheat itself! Doctors are NEVER going to give information to make a patient healthy-just a pill, and instructions for a repeat visit-for their boat payment. If doctors actually made people well by arming them with advice about improving health through diet, they would be out of business. I spent 12 years in agonizing, crippling pain, being sent from University after University, clinic after clinic, specialist after specialist-all gave me more meds, and NOT ONE every mentioned diet-I healed when I figured it out for myself
